Static refrigeration systems can maintain a higher moisture level internally preventing the air from becoming dry.
Fan forced cooling systems are designed for frequent door openings as the temperature can recover quickly Fan forced refrigeration system does have drier internal air as the fans circulate the air to maintain the temperature.
